I say it all the time, "Double your greens!" or encourage every to add that one more plant to their meal with the Plus One Strategy.

Summer is a great way to add those veggies by throwing them on the grill. Adding grilled veggies to family meals is a great way to eat healthier.

3 quick, easy ways to add grilled vegetables to your meals:

1) Buttery Grilled Golden Potatoes

In a large piece of heavy duty foil, slice golden potatoes 1/2 inch down but not all the way through, add sliced sweet raw onions in between slices of potato, drizzle with 1 Tablespoon melted butter, season with salt and pepper (garlic optional) and seal foil into a tight packet. Grill over medium high heat for 30-40 minutes until potatoes are tender.

Place 3 small chicken tenderloins on top of vegetables. Add basil or other seasonings. and seal foil into a tight packet. Grill over medium high heat for 15-20 minutes until chicken is cooked through and vegetables are tender.

3) Easy Marinated Grilled Summer Vegetables
