3 quick, easy ways to add grilled vegetables to your meals:
1) Buttery Grilled Golden Potatoes
In a large piece of heavy duty foil, slice golden potatoes 1/2 inch down but not all the way through, add sliced sweet raw onions in between slices of potato, drizzle with 1 Tablespoon melted butter, season with salt and pepper (garlic optional) and seal foil into a tight packet. Grill over medium high heat for 30-40 minutes until potatoes are tender.
2) Italian Veggie Chicken Packets
In a large piece of heavy duty foil, layer chopped onions, summer zucchini squash, sliced mushrooms. Drizzle with olive oil, season with salt and pepper. Place 3 small chicken tenderloins on top of vegetables. Add basil or other seasonings. and seal foil into a tight packet. Grill over medium high heat for 15-20 minutes until chicken is cooked through and vegetables are tender.
3) Easy Marinated Grilled Summer Vegetables
In a large zipper plastic bag or large bowl, add 4 cups thickly sliced summer vegetables such as eggplant, sliced squashes, sliced red onion, quartered peppers, or other tender vegetables and season with salt and pepper, then drizzle with 1/4 cup prepared vinaigrette dressing and seal. Shake bag to distribute marinade. Marinate for 15 minutes or overnight. Grill over medium heat for 3-4 minutes per side.
